One of my favorite things about the holidays is baking. The smell of cookies in the oven makes our house feel cozier and my fam love all the sweet snacks. As a health-conscious mama though, I do try to steer toward treats that use the cleanest products and ingredients possible.

My go-to for dough and scratch mixes is Immaculate Baking Co.  I love Immaculate for a few reasons. First, because their products are tasty! And second, because their mission is to create wholesome baking products – many of which are certified gluten-free or organic. And given I have a whole section of this blog dedicated to clean living… well, I’d say those are golden words in my world 😉

Gluten-Free Double Chocolate Chip Cookies



  1. Heat oven to 350°F. In large bowl, stir cookie mix, cashew butter, banana, oil, vanilla and egg until soft dough forms. Stir in walnuts.
  2. On ungreased cookie sheet, scoop approx. 1 tablespoon of dough per cookie. Leave 1.5-2 inches between each. Press lightly with the back of a spoon to flatten.
  3. Bake 10 to 12 minutes, until edges are light golden brown. Cool 2 minutes; remove from cookie sheet. Cool completely, about 30 minutes.
  4. Enjoy!
